Until you go bespoke it's imperative to find which brand's last fits you the best. For me, Allen Edmonds 11EEE fits me 99.9% perfectly. My brother in law can't fit into AE to save his life. When /out/ I wish I could wear danner or lowa but salomon fits me perfectly. You're gonna have to take the time to explore. I tried a few different brands using squishy insoles when I used to teach but having to size up to fit the inserts caused more issues so I used a bench stool and dealt with it.

If you want to punch in a cheat code, I'd grab a pair of double monks and loafers. You won't worry about tripping over laces, you won't lose face if your laces untie, and most folks will assume you already own a few pairs of oxfords.

Yes for running, the knit make it fit real snug without it feeling too small which makes wonders when running. I dunno about gym though, any boost would probably be way too soft for any weighter exercise. I use my ub19 casually and for running and they are probably the comfiest shoes I've had. You might find the older UBs more aesthetically pleasing but the 19s design has really grown on me and is probably the comfier out of the 2.
