Not totally flat, and not for the entire duration, but flatter, and with less extreme torque difference at both ends of the winding that the old non-reversing mainsprings. Basically these are already good enough for chronometers.

As you can see in the caseback of a similar SARB, the movement fills the case.
So it's down to the date disk.

I guess it's a design choice, the Marinemaster 300 for instance also has a pretty small dial for its size. Helps it look smaller, and gives it more depth and interesting dimensions.
And looking at your mockup, I really do prefer the original.

The movement is not the problem. Stowa cases and some other parts were made in China. On the other hand, both sinn and damasko's cases were made by themselves in Germany. They also put a lot of money to develop their case hardening technologies: tagimented and ice hardened cases.
