I think the problem in a big city like paris is that those shops get way more visitors.
Thrift shops only hang in the store what they have, they can't restock like a normal shop: once an item is gone you probably won't find it again.
Any good items that come in will be snagged away by the first guy who recognizes the quality/potential. If you need a day to think about buying it, too bad, a guy came in 1 hour after you left and bought everything.

Try finding shops that are either still unknown by the general fashion crowd or try going to a shop the day they get new stuff in.
