How does finish wear work? Scratching wood thousand times with pick or having your skin/shirt polishing it constantly makes it wear down, I get it. There are many guitars with natural scratches but those trashy old strars look like they drag them on concrete, what the hell? Is this paint just designed to fall off or what?

not sure if this is a rhetorical question, but anyways. First of all, it only works in nitrocellulose finish, which stopped being used a long while ago, companies switched to PU. The former was a much thinner coat and with enough use would wear out, the latter, you can use it on the road for 200 years it will not wear out.
On nitrocellulose, there are those sings you mentioned: accidents. Picking in the wood, hitting the guitar, scratching it, belt rubbing against it. But there are also natural signs. If you play enough years with a guitar with nitro finish, the paint will start to wear out naturally, giving way to wood, but this only happens in places that are in constant contact with human skin, sweat, etc, eg the part where the wrist of the picking hand always rest, the place where the guitar sits on the guitarist's lap...
So a guitar like that in your pic is hardly a natural phenomenon, unless it was treated like a bitch for 40 years on the road.

Take pic related for instance, where the right hand's wrist sits on the bass, you can see that there is a part that the paint tone is different. That is the first part of the process: paint gives way to the paint primer, usually white, and when it wears out even more it finally shows the wood. Flea's bass, at least in that part, seems very natural.
