I'm trying to go for something that's simple, rugged, and plain. So far I got this

I've always found that approximately 80% of a style's value comes from the thought process behind the aesthetic appearance.

The first question is, what is a viking to you?

From what you've mentioned, it seems like utilitarianism is important to you. I'm going to assume your mentioning of "simple" and "plain" means that you have an inclination towards minimalism, but your apparent desire for "ruggedness" and function would mean that extreme minimalism (i.e. form over function) would be against your values.

I'm also going to assume that you want some natural, earthly connotations within your style. You will want to look into colour palettes derived from nature, but not too bohemian: flowers do not seem to suit you, and even camouflage patterns might be too natural to work. Instead of raw natural colours, mix natural colours with primitive and artificial colours: iron, coal, rust, stone bricks, and braised beef.

Consider these options:

>Pants: Paige Craft Cargo or Fjallraven Karl
>Shirt: Tea dyed long sleeve Henley or charcoal long sleeve crew neck
>Jacket: Fjallraven Ovik or Aether Field Jacket

I assume you don't want to look like a LARPer.

historically, the materials commonly used for clothes were linen, wool, leather, and silk. wool was the go-to textile fiber. I would probably go with silk & linen for warmer seasons, and wool for fimbulvintern. leather would work all the time.

as for colors, richer vikings showed off their wealth by using brightly color clothes (because dye was expensive). poor people were unable to do that to the same extent. vikings mostly used different plant-based dyes. a lot of brown, grey, red, yellow, green, blue.

core concepts for the clothes & accessories were utility and comfort. all of the stuff were pretty basic since that was the level of technology we had at the time.

clothes were held together using different kind of pins and brooches made of wood/bone/metal, together with thick strings and leather straps.

as for accessories, consider various bracelets made from carved leather - and silver. silver was very popular with the vikings. it was a matter of very simplistic jewelry designs though, during the early periods. then it all became very decorated and adorned. just google "viking brooch" to see what it was like. rings and necklaces (silver hammer of Thor + leather strap, for example) are also worth mentioning.

this is the kind of stuff I remember from school here in Sweden. I guess it's just a matter for you deciding upon if you want to go with a historically accurate (but modern) interpretation, or an interpretation that's more true to what people now imagine that the vikings were like. doesn't seem like quite the same thing to me.

I think I got the top, and outerwear figured out. But the trousers, I'm still a little hesitant on. This "look" will also be what I used for going hiking, and camping. But I'm trying to stay "traditional". Hell, even my tent is literally a tarp.

What vikings dressed like has been documented in books and paintings in several other countries that they traveled, raided, and traded in. Multiple archaeological digs have uncovered old clothes, armors, textiles, dyes, and other items.
