Espresso roasted coffee should be what a lot of people call a "medium" roast, but it's not that simple.

My personal favourite drink is espresso. Fully extracted, balanced, properly specialty roasted espresso.
I'm a big fan of washed process coffees for the clarity and acidity quality but a natural process or semi-washed can be really great.
Pour-overs are another of my favourite. Natural process filters are really fun to play around with.

cappuccinos, cafe lattes, flat white, etc shouldn't exist. If one of them should exist it should be the flat white.
Coffee shops should offer espresso, long black and milk-based (maybe piccolo and macchiato too".
Milk-based should be served on either a seasonal blend or a house blend through a predetermined amount of textured milk (depending on how the coffee is roasted and what brew formula is used, generally around 115g-130g), textured to no hotter than 60 degrees Celsius (140f). Black coffees should be served on a single origin with the selection of washed, semi-washed, honey, and natural processes.
Filter coffee should be offered in the form of pour-over and cold immersion brew.

Also ristretto shots are considered bad in the specialty coffee world. Specialty coffee is roasted for a flavor profile only achieved in a fully extracted espresso.

To answer OP's question, it cannot be /fa/ to drink Starbucks coffee.
