Yeah I try to eat once a day but sometimes I end up having a small snack before bed. I'm slowly getting rid of that habit though.
I highly recommend protein shakes. Having one before or after dinner fills me up and completely gets rid of late-night cravings, and they're only like 200 cals with skim milk.
I aim for around 1200 a day too but I feel satisfied with less than 1000 most days, and even around 600-700 on really good ones. Don't underestimate protein.

Muscle is really dense so by building muscle you'll get heavier, yeah. But you can just lose more fat to compensate.
You can build muscle and burn fat at the same time if you manage to get like 0.8g of protein per pound of body weight while still maintaining a caloric deficit. (assuming you're working out)

Also """healthy""" is a word that's been abused so much. So-called healthy food like granola, fruit juice, and yogurt have a shitload of sugar in them most of the time. It's disgusting. So "eating healthy" isn't enough, you have to actually know what specifically is going in your body.
