What food can I eat that won't spike my insulin while I hit the gym and do OMAD?

Also, I like to eat something before working out because working out while fasting make me feel kinda weak and lazy. I like to eat oatmeal and black coffee for energy. Does it count as a meal or will it ruin any progress?
