If you're going to Iceland for the winter I'd suggest a technical outerwear type of garment, like Outdoor Research, Arcteryx, Mountain Hardwear. If that's not your style you'll want something thick and wool. But a tech coat is going to pack down better and hold up to rain and snow better.

Fitted techwear, easy, pic related, about as basic and universally accepted as it gets. And with full range of motion: the Patagonia baselayer is a 65/35 merino/polyester knit that stretches and it's got a great construction, and the Climbers and the Frode are built out of nearly identical nylon/poly/elastene softshell with four way stretch. Add a waist pack to make up for the slight pocketing.

Merino is the best fabric for temperature regulation in most environments, but it dries slow as fuck compared to polyester or polyolefin, and so they're a better idea when it's dangerously cold out and you'll be working up a sweat without going inside.

Their main downside relative to merino is that wool is naturally odor resistant and they pick up stench terribly, polyolefin worse than polyester. There's ways to try to engineer it out that most brand will do today, but they're never entirely effective and they can all be applied to wool, too.

Wool's main downside is its lack of abrasion resistance: it'll wear down very easily under friction.

Some other brands for wool gear: Ibex, Smartwool, and Icebreaker are the three big names in wool and athletic wear, producing full lines of wool clothing in a range of weights, blends, and styles. Patagonia produces ones blended with poly to balance out dry time and durability, like the one in pic related. Arc'Teryx has some solid wool options. Finisterre is a British surfing company, with an aesthetic exactly like you'd imagine from that, with a superb wool range.
