If your starting out and have no idea about bilding an interesting fit black is easy and safe. You eliminate a big source of failure when avoiding colors and (colored) patterns. As easy as it is to put together a fit that works, it often ends up pretty basic and boring. It still takes some sophistication to put together a great all black fit.
This is where things becomes interesting: by omitting colors and color patterns you emphasise proportions and materials. All black enables you to wear really wild proportions while still keep the fit together, see tricky Rick. Keeping one attribute fixed allows for greater variety in other areas.
