Green and black (yorkshire) teas aren't considered herbal because they're made from actual tea. Stuff soaked in hot water that's not tea (herbs, fruit, flowers) is considered herbal tea.

Chamomile is indeed herbal, though I dislike it myself. Are you sure you looked into herbal teas before writing them off? I also have an aversion to bitter, so I'll list some tips. They helped me acquire a taste for unsweetened teas.

Fruit blends: These tend to be a little tangier (sour) than expected so you may need some honey to even it out. Expect them to taste pretty much like heated juice. Come in lemon, cherry, wild berry, and others. They usually include hibiscus. There's also some...dessert? blends like "apple cinnamon" you may want to try.

Flowers: Chrysanthemum and rose tea. Rose is a little perfumey and can take getting used to while chrys is more standard. There are also rose blends with black tea so make sure you know which you're trying.

Others:
Red Rooibos and Honeybush. These two taste similar, with Honeybush being a little sweeter. Rooibos can be described as similar to black tea less/not bitter vaguely naturally sweet. It took me a while to get used to it since it tastes a little unique.
