What type of bolt is this and how do I take it out? I've tried prying it out but I don't want to bend that metal sheet too much that it's attached too

That's a rivet. You need to grind off the top.

Alternatively, it can be drilled out too. Just use a diameter drill bit slightly larger than the hole in the middle.

It's a rivet. You just drill it until the head pops off.
