I remembered reading about a use for Non-newtonian fluids as body armor. You've seen the effect with corn starch and water. It's a liquid when no force is applied, but hardens in response to an applied force. Wound healing is a very complex subject and imo a clean cut and a jagged cut doesn't factor that much. Jagged cuts trigger a faster respond from the clotting factors than a clean cut but cleaner cuts allow wound to approximate (seal) quicker. Anyways there are too many factors in this.

But a wound from a deep penetrating triangular shaped hole is very difficult to suture and approximate. Cutting arteries to send your target quickly to a hypovolemic shock is ideal like you mentioned, but hemorrhaging organs from a deep stab in the torso is worst and unfortunately easier to inflict with a trench knife. There is a alot of space in the torso cavity to bleed and its more fatal too since it is harder to assess and to treat especially in the field.

Bulletex. Comes in huge sheets, or however big you want it. Multiple layers of fiber meshing layed over each other suspended in resin and then hardened under compression. Can use it to bulletproof your whole house if you really want to.

Around here, the muggers carry screwdrivers or if they have a prior conviction, they just use a burst of hyperviolence (punch head, stomp head several times). After you are hurt a lot, you cannot see and identify them. At that point is when they rob you. So far, 100% of all the muggings in this predominantly white area are by blacks. It doesn't work in the USA because the black muggers typically hit you in the head until you fall down and then kick you a lot and/or stomp your head. They do that BEFORE they take your valuables because too many people have martial arts or other self-defense training. So they hit hard, fast, and make sure you are too hurt to skill them before they take your stuff. It's ironic that self-defense courses have resulted in much more harm to victims than before since the muggers now assume all targets have self-defense training, so they have to take the target out before looting. That often means stomping the head, elbows, and knees.

As for wearing chainmail, that makes me too slow. Several times, I've had to run away from the ATM because there was someone running at me from a distance away. If I ran slower, they could catch up and make me go to the ATM to give them my cash.

I don't think the OP's british armour would work against the muggers in the USA. When they strike, it is with a strong stab and not some prissy one that bounces off your plastic slats. Boiled leather was actually used as armor from antiquity right up first world war when the German picklehaube was replaced by Stalhelm. It can be molded into complex shapes.
However, I'm not sure well made fiberglass wouldn't work as well, if not better.
