two things, both from experience with poor fitting uniforms.

first, get a pair of shirt-stays. they'll keep your shirt tucked in tight and looking sharp.

second, fold them over (and maybe pin them) on the sides.

shirt stays are the best option. for a quick fix, you can kind of dart the shirt in the back. put two folded darts in the back of your shirt when you tuck it into your slacks.

bundle the excess fabric in the back, take a clothes pin or a paper clip or staple the extra fabric together. Kind of like a ponytail for your shirt.

you just need to wear a suit or a jacket along with it

If you're trying to convert a normal shirt into a slim fit shirt you'll have to taper the sleeves as well because just tapering the body will totally destroy the proportions of the shirt. This tripples the total amount of work for one shirt and makes it quite probable that you fuck up one seam if you're not used to sewing.
