From the N.E. corner to the S.W. corner the house dropped out of level by about 7.5"

On the dropping side the house was 3 stories of uninterrupted brick cladding, I got my 8' level and strapped a 12' stick of bar aluminum to it, put that to the house and began pulling away watching for the bubble... got the bubble when my level was about 5" off the wall at the bottom of that 12' stick.

Depends on a couple factors.
Interior or exterior - if exterior and you live somewhere with snow it's a big risk.
Thickness of the foundation - honeycombing might only be at the surface and the remaining structure is solid.

Most concrete infrastructure is only given 75 year design lifespan, so your 80 year old foundation shouldn't cause concern if you upkeep maintenance.

So, yeah, it's a stupid thing to use OSB for basically anything.
But I'm willing to bet the real fault in that picture is not the OSB, but the house wrap.
When they first started making things like Tyvek, the wraps were formulated differently. They found out the hard way that if you wrapped a house and let it sit in the sun for a while before the siding went on (as often happens in large developements and such), the sun's UV rays changed the chemical structure and made their one way vapor barrier into a zero way vapor barrier. So all the moisture that was trying to escape the house would hit the housewrap and condense on the exterior sheathing, rotting the whole thing from the inside. There were some pretty big lawsuits because of that. These days housewraps are sold with an exposure rating, basically telling you how long they can be exposed to the sun before you're buggered.
You know what else fucks up house wraps? Natural wood siding. The tannins in the wood do the same thing the sun's UV rays do. So if you're putting natural wood siding over housewrap you have to seal the backside of the siding so it doesn't interact with the wrap.

And this is why I have and will always use tar paper. Proven for over a century. No lawsuits.
