How feasible would it be for me to make a pair of night vision goggles? I've seen tutorials on digital based NV but I'm wondering if anyone here has any experience with this and if their inevitably low quality was worth the build in the first place.

Not hard.
I made a pair with a small security camera that I removed the IR filter from, and fed the video into a set of FPV goggles. It's near IR, so it needed an IR illuminator to work, which I just used a 1w IR LED for.
I even used a microcontroller to overlay a HUD (battery life, GPS coordinates, radiation level, and a gas detector)
Total price of about $200 (most of that being the FPV goggles).

If you want far IR nightvision (thermal cameras), then you can get a FLIR module, like the Lepton. This is significantly more expensive, and will require you to convert the raw data from the Lepton into video, but still doable.

It wasn't too bad, I used the Video Experimenter Shield and TV Out library.
Resolution was a bit limited and it's black and white only.
I've learned a lot more about micro controllers since then, and I've thought about re-writing the project on a more powerful platform than the Atmega324.

Honestly, the one part I never got done was a helmet to mount the whole thing in.

Depends on why you're doing it. If you're gonna do it for the fun and learning of building one, go for it. If you just want functional nigh vision goggles for the least amount of money, go buy some, because you will just get frustrated and give trying to make them if progress goes slowly (it will).

i have been doing research on aliexpress into the following products:

round OLED screens, like for digital watches
infrared cameras
affordable thermal sensors
processors that can combine everything together with minimal lag

Just about everything under $100 has a resolution of like 20x15 or something stupidly low.

The most simple way would be a dashcam with bunch of IR LED diodes, 18650 cells power pack and metric shit-ton of duct tape origami.

If ya want cheap NVG look for gen 0 military surplus like PNW-57A. The only required hack is to replace power cord with 12V 18650 battery holder. Then either mount IR illumination on goggles or whatever ya want.

I got mine for 45 USD, full set in working condition.

most fpv goggles are analogue. so it's really easy. there's modules/chips that will do it for you. take s-video in, composite hud onto the signal, and send it out to your goggles
