Buddy, what you want is to paint the roof after you finish. That way it blends in from satellite images. I'd recommend to paint it black with a shot of white. I hear it matches anything. Maybe put some leaves on top too.
Oh and you are definitely going to need a solar panel and a fridge. Don't want that imitation crab meat going to waste.
Now that i think of it. I think your best way to hide it would be to put it underground. Dig a deep hole and bury some sort of container. Save the pallet wood to make furniture.

-pull apart pallets and join boards together to make long boards for beams (would they be strong enough?)
-Build an arc frame using said beams on top of regular boards used for walls
-Nail more boards between beams
-Cover in a waterproof membrane
-Cover that in some sort of roofing material (is it called roofing felt?)

Does this sound like it would work or does anyone have any improvements or advise?

That’s the risk of squatting. Getting found and sued before you can claim rights. I would actually partially dig it into ground and use a sod roof to conceal it if you want to stay hidden. Creating garden space and accessing water can all be pulled into the rights later.
