So after my fall harvest, i met my bottling quota, and i got about 20 pounds of honey left.

I want to make some cyser (hard cider/mead mix) since the apple orchard up the street should start pumping out some good local cidar soon. My brother has attempted this with good results, but he puts too much honey in it i think.

So basically i want cider, honey, a couple cloves, and maybe a large orange. My dilemma is how much honey to cider? should i water it down?

I see a lot of recipes recommend adding sugar, that just seems stupid, why use sugar when you got honey?

Anyone had any experience with it?

Just bottled my West Coast Nail Ale.. it tastes like honey... oh man it tastes soooo good. And it's not even carbed yet. I came out with 8½ liter bottles filled.

Honey in beer = Nectar of the gods
