Here's ones I built awhile ago. I glued LEDs in the holes of peg boards and wired them up in a matrix. It took forever and RGB would be three times longer. Pre-made matrix modules or addressable strips are the way to go unless you've got a lot of time and want things to be as cheap as possible.

It's all about carefully planning things out in a way that can be built quickly. This is another LED wall I built a year earlier. Building this one dragged on for months and months because I didn't put any thought into minimizing the labor involved. I learned from those mistakes.

I've built some large LED Matrixes from individual LEDs; but it's a neightmare wiring up each individual one. These four low resolution monochrome ones took a few months. RGB 640x480 would be a nightmare. Using addressable LED tape or premade matrixes would have been much faster but cost thoasands.
