1. I used nice sirloin
2. humidity was in check
3. I guess I'm not that good at describing taste. The fact that me and the other 4 people who tasted the steak didn't feel sick at all should prove otherwise.
4. I kind of guess some of you here just want to act like they have any idea what you talk about, and thats fine. Still, give it a rest. The meat looks like the dry aged beef I've seen, it tasted good, but stronger than usual beef, which is hard to describe, and I'm SURE you all know better because of the self-summary I've provided.
Salt also worked perfectly fine.

bought it from the internet, then spent a few hours cleaning it with vinegar+lemon water, then with some kind of cleaning substance then again with water.
well, sort of bought, I looked it up on a austrian buy-and-sell website, thought I'd buy it, then got it for free because the owner didn't need it anyway.

Gonna go with Crispy Tossed Potaetoes, steamed brokkoli and a Blaufränkisch wine with those steaks for today's dinner-

btw, ate it 12 hours ago, still feeling perfectly fine.
Seems it worked out pretty well.
Don't have a scale sadly, but atleast 0,7kg from 1,1 were left after the process.

now back to the important part - I cooked the smallest piece, probably around 2 cm thick with a fat layer.
Very hot pan, a small splash of olive oil, salt, pretty standard. 1 minute 15 seconds each side, peppering after turning around.
Next time I'll go with 1 min 30 sec each side, but it was still great.

I started with 1,1 kg of Sirloin steak, and held it in a fridge with the temperature of 0-5° C, low moisture and circulated air.

I think it's pretty decent when fried in a pan with a shitload of other vegetables as a whole, but eggplant alone is just horrible in my opinion.
