Hello lurkers and posters,

I will commence the poor man's carbonara. The ingredient list and instructions are as follows, but I also freestyle a bit on weights since I don't care and carbonara-like dishes are ezpz. If you don't have bacon or pancetta, use butter.

# Ingredients
- 1lb any pasta
- 1 full egg + 1 egg yolk
- 0.5 -> 1.0 cup freshly grated parmasean cheese
- 0.5 teaspoon pepper
- 0.5 teaspoon red pepper flakes
- 2 cloves garlic minced or thinly cut
- 1-2 tablespoons olive oil
- Salt for the water
- 3-5 slices bacon, or equal weight pancetta (~100-200g)
- large wooden spoon for pasta and mixing
- tongs for flipping bacon

# Instructions
1. You need two pots: large pot for boiling water; large frying pan for meat/fat
2. Grate 0.5 -> 1.0 cups of fresh parm, put into a mug or low-ball glass with 1 full egg plus 1 egg yolk. Mix into a slurry. The slurry prevents scrambled eggs.
3. Place frying pan over low-medium heat, place cold bacon in the cold pan with 1-2 tablespoons of olive oil. Reduce the fat from the bacon.
4. While the bacon is starting on low-medium, boil a large pot of salted water (3-4 tablespoons of salt).
5. Once boiling, add 1lb (454 grams) of any pasta to the pot.
6. When the bacon is browned on both sides and has no/little fat left in the meat, turn off the heat, take out the bacon, and cover the frying pan to retain heat. Chop the bacon and put it back into the hot fat with the minced garlic, 0.5 teaspoon of red pepper flakes, and 0.5 teaspoon of pepper, then leave covered with the heat OFF on the hot burner.
