I've been thinking of letting the yeast make more foam than usual. Like as much as possible, so that the whole bowl is foamy/bubbly. In theory this would make the dough more foamy after cooking. Has anyone actually tried this?

OP, start off with some Paul Masson. It's as inexpensive as E&J, but much better quality. I wouldn't suggest a higher quality cognac until you acquire a taste for it. However, when you do, buy Courvoisier. Remy Martin is a close second.
