Take cheap vegitables that you have plenty of, onions, tomatoes, carrots, celery, etc. etc etc., and do what you recommend. You need a little bit of seasoning to really kick it up a notch, salt / pepper / rosemary / oregano / thyme / tablespoon of hotsauce OR vinegar, depending on who you are. Boil it for an hour or two like you recommend then, take a bowl and fine mesh strainer. poor through the strainer and with your hands (which are clean) push down on the mushed / cooked vegis until all the liquid is removed. Now you have a base for your soup. Now you can make your soup.

Saute the vegis (which are dusted in your kosher salt) I like little bit of olive oil, but butter will work fine. Medlow - low heat about 5-10 minutes. season the vegi's with typical pinch of salt and spice combo, let them simmer on a low low heat. Add your broth which you made the day before and let it cook on the smallest burner at the lowest heat 6-8 hours. You can add a starch like potatoes / egg noodles if you wish at this point.

>Finishing touches. Honey, Lime Juice, Creme Fraiche. Add these right before you are going to serve it.

Beef broth also works. I would always make a nice hardy soup (out of a broth, which is always homemade) when i have an abundance of leftovers from a family gathering or another meal with large portions.

You are essentially making the broth the same day you are making the soup, thus you aren't reaching the full potential of flavour then you drown it with sherry and blue cheese to mask for your tasteless soup.
