I have the Maverick Et-732 Remote Bbq Smoker Thermometer that's on Amazon. It has never let me down.

Some people will probably disagree but you shouldn't worry about the kind of wood you are smoking with unless you are leaving it in the smoke for more than 6 hours. That is when the distinct flavors kick in.

I used to live in military dorms and shared a kitchen with the entire building. There will be assholes that leave the kitchen looking awful, nothing will prevent this.

Stock up on cleaning supplies and bleach the entire fucking place before you start cooking.
Invest in your own hardware and keep it in your room.

While it does help to have welding experience or the friendship of somebody who does, it is not necessary. A UDS can be built with nuts and bolts only.

That being said, I built myself a UDS with the help of somebody who has welding experience. There wasn't much welding that needed to be done, and since I had everything figured out before we even started it didn't take long at all.

Pictured is mine, I have two racks on the inside held up by four 3" pieces of 1" angle iron welded to the side by a friend. It sits on 4 steel wheels that keep if from burning a hole in the yard if I take it somewhere.

Salt Potatoes and garbage plates can't be limited to just Northern New York and Western New York specifically.

Salt Potatoes are the bomb though, and leftover salt potatoes are great to add to home-fries about 5 minutes before you take them off the heat.
