On a serious note, I got an eggplant parm instead of a chicken parm, the guy handing out orders swapped them by mistake. The eggplant parm was pretty good, I'd order that again sometime. I only hope the guy who got my chiky parm enjoyed it.

Boomer here. What happened was that when "craft beer" started to get big, the industry focused on x-treem sugar bombs, hop bombs, and alcohol bombs, because the highest demand was from people who wanted to make it VERY CLEAR that they weren't drinking "pisswater" (macro lager)

The people who bought those kinds of beers had a certain reputation. Very loud about their supposedly superior taste in beer, and usually this came with other forms of obnoxiousness that come from being a college-aged youngster who knows everything. Those people aged into Wil Wheaton types, pudgy, glasses, prone to having milquetoast opinions on their real name internet accounts (a novelty at the time) and sperging over certain kinds of consumer goods regarded as "manchild" precisely because around that time, being an adult with an "inner child" became something to boast about on twitter (you had to be there).

Nowadays nobody says "craft beer" anymore because that's just "beer", and IPA is like 3/4 of the shelf at any shitty grocery store or gas station. But at the time, it had some baggage. Thank you for reading my blog.

Just get wine yeast with high abv resistance on Amazon, some of them can go all the way upto 16-20% after fermentation finished, way stronger than beer and if you're not doing it as a hobby and more as professional alcoholism, get a giant 3l apple juice jug or bigger that Walmart sells, they're cheap as shit and usually are just apple juice made from concentrate, measure out 2 cups or a bit more if you want it sweet, of granulated white sugar. Dump all the sugar in the bottle along with the yeast, shake that shit up quickly so nothing clumps and the sugar can dissolve some, and get a airlock for larger size bottles. After that, chuck that shit into a closet for 3 weeks-month, then siphon the "wine" out in New bottles while leaving as much yeast shit at the bottom as you can. Bottle it up and let it sit again, resiphon if you need to again a week later. After that it's pretty much safe to drink.. but it's not gonna taste too great. After 2-3 months or so of aging it's decent. I'd give it atleast another 2 weeks or so after siphoning after fermentation.
