yea when you heat oils this high they actually start changing at the molecular level. they begin forming into long polymers, that make for strong, non-stick surfaces. theres a lot of science behind it all and turns out that omega 3's and a few others are best at making these large polymers.

also turns out that the lard you use these days comes from the same pigs you get bacon from.

but it wasnt that way in the past. the were different breeds of pigs. some were breed for bacon, some were breed for lard. lard pigs were even fed different diets than other pigs. and turns out that those pigs had more omega 3's and such in their lard which made for better lard and better seasoning than others.

but today, pigs are just fed whatever feed is cheap. no guarantee on the quality of the lard.

im not saying it wont work, im saying that science says that my surface will be a little bit more durable than yours.

just get %99 of the crud off, dry, and put it away.
you dont want to end up with a pan like what mine was, with thick black goo caked on it...

yea the tank really is a mixed variety isnt it... i thought about getting rid of the angels a while back but they have started behaiving. the only trouble im having right now is the black ghost knife is hiding behind the filter tube... considering duckweed to kill the light a bit.
