If I enter this month I'm leaning towards onion rings, which I fancy myself as being quite good at.

Elotes, but in soup form.
Corn broth, roasted corn pureed in with cayenne, lime, crema, and cilantro. Topped with roasted corn, crumbled cotija, minced cilantro, and a dusting of ancho powder, maybe some home made corn tortilla strips.
Damn, but I was looking forward to making it, still might be able to.
