Maybe add some rice and top with the veggies (are peppers a fruit?) and then use the reduced liquid as a sauce. Garnish with flat leaf parsley. at this point I'm really not that concerned about presentation.

it's an option I suppose. I'm planning on quitting my job so I can get a different one that's more accommodating to my time table. So the next couple weeks I'll probably be pretty short on money and won't be able to. I'd rather just save up and buy a really nice cast iron pot that I can have until I'm an old man.
