>Sodium Citrate (emulsifier, makes a cheese sauce with almost any cheese + water)
>[Kappa, Iota, Lambda] Carrageenan (thickener & stabilizer, along with sodium citrate you can make something like Velveeta from any cheese)
>Meat Glue / transglutaminase (protein bonding enzyme)
>MSG ("savory salt")
>Citric Acid (primary acid in lemon juice)

I've used some other more common things, like gelatin, corn starch, gum arabic, cream of tartar, etc, of course.

Eventually I'm planning on getting a soxhlet extractor to make my own concentrated extracts.
