Calling it a taco was on purpose, I wanted to make a burger themed taco, not a hamburger with taco elements. I figured we would see a parade of meat on bun and a taco would break it up.
And I know the presentation is shit, I was drunk and really wanted to eat...

The stock is made from the trotter and hawk as will as the shoulder bone after the pork was done. I smoked trotter and hawk for about 3 hours, and the shoulder for about 18 hours. I made the stock as stated then made a raft with egg whites and shells, tomatos, and some of the uncooked pork minced.

In the stock, in addition to mirepoix, I added fresh garlic, fresh ginger, and some red chili flake
