Most of their vaunted "soul food" establishments cook cafeteria style in the back but try to serve it al minute, so it tastes like shit but dumb white libs lap it up. That's the case with all of the joints in Harlem.

Mostly, though, it's French cooking without the restraint, breadth of ingredients, or technique.
