I know you must be trolling or retarded. But I refuse to let my fellow coo/ck/s be misinformed. Chimichurri is essentially parsley, garlic and olive oil. With a few additional ingredients this sauce, when freshly made is the king of steak sauce and can be served with almost any meat.

Basic chimichurri:

1 cup of Fresh Parsley
3 Tbsp of Fresh Oregano
3 Small Cloves of Garlic
¼ cup of Chopped White Onion
3 Tbsp of Red Wine Vinegar
⅓ cup of Extra Virgin Olive Oil
Pinch of Hot Pepper Flakes

Blend everything but the olive oil until it forms a thick paste. Drizzle the olive oil in sowly, while stirring . Cover with plastic wrap and stick it in the fridge for an hour to allow the flavors to play Scrabble together.

Spoon over any hot grilled meat and be mesmerized.

is the one I usually use.

If you don't feel like following the link:
1 large bunch of fresh flat leaf parsley
8 cloves of garlic, peeled
3 tablespoons minced onion
5 tablespoons distilled white vinegar
5 tablespoons water
1 teaspoon coarse salt
1/2 teaspoon dried oregano
1/2 to 1 teaspoon hot pepper flakes to taste
1/2 teaspoon freshly ground black pepper
1 cup extra virgin olive oil
Add parsley and garlic to food processor and hit the pulse button a few times to mince. Add remaining ingredients and pulse some more.
If you like the fresh crisp flavor of parsley, use immediately. Letting it rest overnight will balance out the flavors.
