Performance based wages is a win for all parties; the customer who receives excellent service, the server who receives additional wages based on performance, and the employer who is able to provide employment easier.

Hell, last month I was at a local diner that I used to frequent. I left zero tip. When the employee was ringing up my card she muttered under her breath something about "assholes not tipping". I explained that I am a frequent customer, and I usually tip very well. I pointed out to her that the reason why I left zero tip was because the wait was excessive (I timed it at 40 minutes), the wrong food was brought out, and the staff was very inattentive about refilling my drink. It turns out she was the manager. She apologized, comped the entire meal, and offered me a discount next time.

Inner Paris is expensive. I live in the cheapest area in the whole city, and my rent is about 550€/month for a one-room flat. It's not public housing which can get cheaper, but it's about the same as what my sister was paying for thrice the room when she was in the country.
