I was exaggerating I did find a decent way to prepare zucchini but I was immensely surprised to not see it at all in almost 100 posts.

I've been shredding the zucchini, squeezing out as much moisture as I can, mixing in some parmesan cheese and salt and pepper, and putting this ontop of chicken breasts and baking them at like 325 for 24 minutes, then putting it on the top rank and broiling for 12 minutes.

Spritz with some fresh lemon juice and the zucchini gets nice and crispy and edible.

Anon I uhh.. non soluble fiber is actually good for you. And that's fine if you don't like it raw, but it's a major flavor component with dishes where you saute vegetables, mirepoix etc. It's probably not a vegetable, but for my vote, I'm not a big fan of lima beans. Large beans have a granular texture I'm not crazy about. That and lima beans don't taste great to begin with.
