This. At home you prep a meal, clean up once, takes 5-10 minutes, done, go do other things. In a commercial kitchen if you spent 5-10 minutes cleaning up every time you prepped a meal, you'd be fired. So the default cleanliness level in a restaurant kitchen is by necessity filthy, and that is understandable because if you have to prep 100 meals are you going to clean everything 100 times, no of course not.
