Brit and other euros use that name for eggplants.

Delicious the parmiagana way of course, but also good just sliced, drizzled with olive oil and baked. Lengthwise on the BBQ with a good marinade of balsamic and olive oil and some pinch of herbs. Great in stir fry. I often cube one up and toss it into simmer sauces when making curries.

When you cut it up, make sure you sprinkle some salt on it and let it sit for a bit (called "sweating") and give it a rinse or patting before you cook it.
The salt draws out solanine, which reduces bitterness.

Its a very neutral tasting vegetable that will absorb flavors from whatever you cook with it. It's delicious fried, stuffed, layered in lasagna, in pasta sauce, or roasted and pureed with roasted peppers and onions and used as a dip or spread. And there's many more ways to cook it as well.
