That name is Kurayoshi.
This is not a Japanese original. Mixed-blood whiskey that imported Scotch and studied in Japan by modifying it. Japan is a whiskey boom, burned in it. Unique and smooth. Although I can easily drink it, it is not deep.

How is anyone supposed to know?

You tried "real ramen" exactly one time. That's statistically meaningless. Who knows what might be the case: maybe you ordered a type of ramen you don't really care for. Maybe they didn't do a very good job. Maybe your tastebuds are fucked. Maybe ramen just isn't your thing. Who knows? Not enough data.

Try a few more places.

Curry rice, especially with the tonkatsu, is fucking delicious. I seriously ate it every single day - with a few exceptions - and never got tired of it.

What do you do to pasturise your own eggs?
Normally I just get really fresh eggs if I need them raw, but it would be great to be able to use them raw for a bit longer.

Not him but I use the method described in this link. The only caveat I would add is let the eggs come to room temp beforehand. Basically heat water with eggs to 140F and hold for 3 minutes. Simple as hell.

I make gyudon with soy sauce, sake, mirin, and some water for the sauce. It tastes pretty damn good and flavorful. I've seen recipes call for using dashi in their gyudon though. Is it really worth it?

You can try to model it after British beef stew with a bit of your curry powder since Japanese curry takes inspiration mainly from that
