A couple reasons.

1. It's been sitting out longer than scrambled eggs should be
2. It's usually made from something like pic related

So basically, don't get scrambled eggs from buffets.

If you were on a 5-star hotel for whatever reason, you WILL get a buffet breakfast. As far as I know, you can't opt-out from it
