Lobsters don't thrash around in the pot in the dramatic fashion that he describes. Some death throes, but not the fight for its life that he describes. Crabs sometimes do. And no one who knows what they're doing is closing the pot back on the lobster to avoid seeing it die- putting the lid on quick brings the water back to a boil, killing the lobster more quickly.
