I was thinking about soaking wood chips in a red wine, then running them through a cold smoker. Mostly just to see what kind of flavor it would put into some sushi grade tuna. Thoughts?

My answer is whiskey for ribs works so why wouldn't this, other than pino grigio pairs better with tuna.
