I developed a habanero based hot sauce and successfully sold it for a while. I used to go to bars or restaurants with taster bottles and had spots feature it and sold the shit out of it. Even though it was habanero based it wasnt considered "super" spicy. I would say 99% of my sales came from white people. The non pale skin folk drowned themselves with liquid because it burned. This was a culturally diverse area as well.

Habanero Gold

Ingredients:

1/3 cup finely sliced dried apricots
3/4 cup white vinegar
1/4 cup finely chopped red onion
1/4 cup finely chopped and seeded red bell pepper
1/4 cup finely chopped and seeded habanero peppers
3 cups granulated sugar
1 pouch (3 oz.) liquid pectin
Important Note: You must be extremely careful when handling the habanero peppers. They’re extraordinarily hot, and if you rub your eyes or touch your skin you’re going to be burned. I used rubber gloves when handling and chopping the peppers. It did slow me down, but it kept the oils off my skin.

Steps:

1. In a large, deep stainless steel saucepan, combine apricots and vinegar. Cover and let stand at room temperature for at least four hours, or overnight.

2. Prepare canner, jars and lids.


Boiling the onion and peppers
3. Add red onion, red pepper and habanero peppers to apricots. Stir in sugar. Over high heat, stirring constantly, bring to a full rolling boil that cannot be stirred down. Stir in pectin. Boil hard, stirring constantly, for 1 minute. Remove from heat and quickly skim off foam.

4. Quickly pour hot jelly into hot jars, leaving 1/4 in. headspace. Wipe rim, center lid, and screw band down until it’s fingertip tight.

5. Place jars in canner, making sure they’re completely covered, and bring to a boil. Once boiling, process for 10 minutes. Remove jars and let cool.

I think it all just depends on the person. Im indian and I like spicy food but I can eat bland food also and not be too bothered by it.

Anglo food is just spicy in a different way. Horseradish is a much different burn than a pepper, but it still burns. I had shrimp cocktail at St. Elmo's in Indianapolis with horseradish so strong that tears streamed down my face while eating it. I'd put it at ghost pepper-levels of discomfort

Herbs, spices, and seasoning are for poor people. High-quality ingredients don't need any seasoning because they're already rich and flavorful on their own. You wouldn't add ketchup to a fine steak, but you might need to if it's a piece of throwaway flank.

You can actually map a region's poverty by how spicy their food is. For example, India, Central and South America, the parts of SE Asia that smell like shit, the United States Southeast, and the Caribbean are all huge areas of widespread poverty, but they also have the spiciest food. It's out of necessity.

If you like spicier foods, then chances are your ancestors were poor.

McDonalds did a study of what geographical regions prefer when it comes to level of spice. The closer to the equator you are the spicer you like it, which makes sense from a food preservation standpoint.

White people evolved lighter skin to get more vitamin D because they live far away from the equator

It makes even more sense from a Climate standpoint. Every culture, everywhere, has a need to preserve food. But most spices, hot peppers, etc, grow in a tropical climate. They don't grow in far northern or southern areas.

I live in Liberia and this is pretty much true. You also have to consider growing the thing too.

People here grow and eat peppers because it's one of the few things the wild animals and insects won't dig up and eat. A lot of the common staple foods here are grown for the same reason. There's something called 'bitterball' which is this nasty tasting vegetable that reminds me of chewing an aspirin tablet. It's in fucking EVERY DISH. Even the flies don't land on it.

They also eat a lot of cucumber because it grows faster than animals can eat it. They slice it up and dip it in oil as like a dessert food. I don't know what the fuck is up with that.
