How do you grill a steak on a gas grill? Grilling guides always call for charcoal.

Never seen a gas grill that works like that. Just adjust the gas flow accordingly while watching the thermometer. Depends on how much you want to cook your steak.

keep on high for an additional minute before going to medium. You're gonna lose a LOT of heat when you open that lid, unless your grill has those ceramic stones to regulate temperature. Most do nowadays, right?
