Would it be possible, if in pic related instead of pork I used some cut of beef of equal size to make some sort of Barbacoa/shredded beef? If it WOULD work, what cut of beer should I use?

You want something fatty and with a bit of connective tissue, which will jive well with slow cooking. I'd use lamb t b h, but if it's gotta be beef, use brisket, short ribs, chuck, or shank. For lamb, use shoulder or leg.
