Made a great shot of a Costa Rica San Luis this morning. Strietman CT1 and Lyn Weber EG-1.

Very sweet, very fruity shot. Incredibly clean for a full natural. Absolutely no "funky" notes like what came along with the frutiness of the Ethiopia Adola I had before this one. Also probably the single least amount of "bite" I've had from a coffee with this heavy of fruit notes. I actually quite like bitey shots, but it's fascinating to have a shot that can be this intense and this fruit forward without it.

Makes for an amazing brew too. Probably my favorite brew in a year at least, and it's up against some stiff competition.
Anyway, technical shit if you care:

15g in the basket, 18.9g in the cup.

About 30 second preinfusion then a 35 second pull.

Water temp 201f.

TDS of 14.17% for an extraction yield of 18.5%

Nah, for a normale 1:2 shot I'd agree 100%, but a short shot is usually pulled for a longer time to still hit a proper extraction range. And that goes doubly so for very light roasts like I use. It's almost difficult to overextract one at these ratios. Sometimes I'll even shoot for 45sec if it's a very difficult to extract coffee.

You'd be better off just buying a small propane burner, like for camping. Not to mention if you find a quality one, you can use it for more than just this purpose.

Having a burner with a real flame around can really come in handy if you're limited to electric stovetops.

The science behind brewing is pretty specific, but that doesn't stop French press from being incapable of pulling out as much as possible from the grinds before beginning to extract undesirable compounds. Press begins to extract bitter flavors before it ever fully extracts the "good" flavors, because of its immersion method, lacking continuous heat / pressure.

Pour over provides precise control over the heat of the water, the blooming stage, and the flow rate. While drip just leaves all these factors to the machine, which more often than not is poorly calibrated / can't be changed for different beans / roasts.

Chemex has two specific benefits:
1. A large hole in its carafe / filter holder, changing the way the grounds act at the bottom of the filter.
2. Name brand, very thing filters. (You can buy these filters and use them in any pour over cone)

One thing to bring up, would be another cone, like the Hario v60. Cones of this style have introduced plastic steps to the side of the cone, usually in particular directions (diagonal), to ensure the grinds extract evenly throughout the filter instead of all filtering through the bottom.

That's not a terrible comparison actually, the pump vs steam espresso thing. But the espresso machine comparison is to an even more intense degree of difference.

Thin filters allow more of flavor compounds through. For example, a standard thickness filter will filter out nearly all oil based compounds from a bean, whilst a Chemex filter allows through some of the oils.

I bought it on eBay "for parts" because it was leaky. My initial thought was a fucked up hose or gasket, seeing the cracked boiler was a bummer.

I got the replacement in the mail yesterday, and ordered all new gaskets just to be safe. The thing is, the new boiler is a bit different from the old. On the original boiler, the steam thermostat screwed in vertically. However on the new one, it screws in horizontally and I don't know if that will cause any issues down the road.

I plan on installing a PID and upgrading away from the bimetal thermostats anyway, so maybe it won't be a big deal.

All that only applies to burned coffee. Dark roast =/= burned by default, just lots of people sell you burned and call it "dark roast". The color on a bean comes from the maillard reaction, which if I recall correctly happens between 325 and 360 degrees farenheit. This is why so many recipes for the oven call for "350 f for x hours", it exposes the skin of a food to the right temperature range and browns without having to sear.

The chemicals released during maillard are not harmfil, in fact many are beneficial to you. Most of the flavor extracts we use also come from taking the byproduct of maillard on different foods and playing with it in labs.

A true dark roast might be hard to find for the simple fact that it is expensive. To get one, you need to hold coffee at the right temp for a long time, and the bean gets gradually more brown until it is "dark", which is subjective but usually means 3/4 of the way from brown to black. This will release very deep and actually very mild flavors, and the caffeine will be the least of any blend (maillarding breaks down caffeine, the strongest coffee would be the bitter raw green bean).

Pic related is a lovely true dark roast, do recommend for drip, press, pourover, or brew. It literally does almost taste like chocolate.

New Gaggia's go for $300-400 (2015+ models are plastic garbage), and $250 is roughly as cheap as they get on eBay unless you luck out.

I got this one for $100, new boiler was $70, and all new gaskets are under $5. Adding on shipping I saved maybe $50, but my goal wasn't to get a Gaggia Classic for cheap it was to make a $1k machine for under $500 (and to have a project)

I've also replaced the Panarello wand with a Rancilio V3, and have a fancy shower screen and brass group head on order. Naked portafilter should be here Monday. At some point I'm replacing the vibration pump with a nice rotary pump for more consistent pressure.

I have a Raspberry Pi kicking around I'll use to regulate temperature, and I'm thinking about incorporating a filter into an external water tank.

When it's all done I should have a pretty damn good machine for at or around $500.
