While I agree with you that Cajun is overrated, since when is it "mostly deep fried"? Sure, it has some deep-fried food, as does pretty much any cuisine. But the most famous (i.e. stereotypical) Cajun dishes have nothing whatsoever to do with deep frying: Boudin, gumbo, jabalaya, red beans and rice, crawfish boils, Boucherie, Etouffe, Andoullie sausage, potato salad, tasso ham, etc.

Still I was looking forward to discovering Cajun food and got a tad disappointed. Boudin, gumbo and the rest are ok and I'd say even high standard compared to the other "folk cuisine" in the US.

There's a lot more French influence in Canadian food whereas American has a lot more influence via immigration from other countries (German, Italian, Africa, China, etc)

I've also noticed that Canadian food is more or less the same anywhere you go in Canada (Quebec being a possible exception) whereas the cuisine in the US varies greatly depending on region.
