What is it with the effect of putting the most pungent and flavorful ingredients, in combination, coming out mild? Is it sensory overload?

Grilled sandwich of marble rye, braunschweiger, red onion, herb havarti, stone ground mustard, black pepper, and a little frostbite sauce, and the damn thing is as innocuous as a club sandwich.

What gives? I made one for my half-asleep friend, a piece fell out, he did a little grab-and-eat, and then said, "Damn, that was a part of my sandwich?"

Also, what are more combinations of flavor explosions that come out to a complete item?
