I separated the pulp and seeds. Going to roast them. Never down it before but it should be good.

You don't "gut them out" in the sense that you try to remove the edible flesh. When hollowing out pumpkins for carving you're essentially only trying to remove the seeds and the stringy connective tissues that hold them in place. If I took my jack-o-lantern and cut it into cubes and roasted them I'd get plenty of usable matter for pies etc. after peeling off the skin

Yeah I rinsed them a bit, put them in a colander to drain for a few minutes then tossed some in olive oil and salt n pepper and another batch in S&P, garlic powder and Cumin, and some with all of above and red pepper flakes. Tasty
