In my impatience (not letting the meat get to room temperature), I accidentally made a blue steak last night.

Hot, it was okay. Pretty good, but not great. My red wine reduction helped. I can definitely see why med rare is considered perfect.

HOWEVER, it made the GOAT cold steak sandwich today.

thats raw son, look at all the solid fat. there's not even a sear. at least stick it in the oven at 175 for 5 minutes after it cooked.
