I have chicken breast and a decently furnished pantry with most grains, roots, vegetables, fresh herbs, etc.

What can I do for supper tonight?

place 1-4 chicken breasts on a paper plate. Microwave on high until done in the center, sprinkle some salt and eat. Yum.

Chicken breasts stuffed with cream cheese and pesto, panko breaded.

>chicken breasts
>pesto (if you have fresh basil make your own)
>reduced fat cream cheese
>garlic powder
>salt and pepper
>panko bread crumbs
>dried Italian herbs
>olive oil
>butter
>1 egg, beaten

Butterfly or cut a "pouch" into the chicken breasts
In a bowl, mix ~4 oz cream cheese and 6 oz pesto, olive oil
Stuff mixture into breast--not too much, make sure the sides of the "pouch" still touch
Mix bread crumbs with 2 tsp Italian herb
Heat skillet on med-med high. Preheat oven to 375F.
Roll stuffed chicken in beaten egg, then roll in breadcrumb mix.
Melt butter on skillet. Brown chicken breast w/o flipping for about 5 mins.
Flip, transfer to greased baking pan browned side up.
Cook 15-20 mins, or until thermometer reads 160 F and juices run clear.

One of my favorite ways to eat boring chicken breast besides shredding for soups and stuff.
