Chicken/Porkfag here. I haven't cooked beef ever in my life because it's not a prominent meet over here.

Give me your beef burger recipe, or should I just use a regular recipe? How is beef different, if at all.

I am guessing you are East European?

Forget the complicated recipes involving egg for binding, etc.

If you have minced beef spread it out and sprinkle over 1 OXO type stock cube per kilo.

With cold hands, work fast and take about 100 grammes and form into a patty, make it look like a blood platelet, with an indentation in the middle. Throw back in the fridge for an hour or so.

When it comes to cooking, fry it for about five minutes each side, (turn only once - if you can)

Voila!

Meatloaf sounds really basic and simple but its a comfort food for us. We eat it with mashed potato, gravy and some veg like buttered peas or broccoli.

This is the best comfort food around- tater tot casserole. This is also very scalable to 2lbs with a bigger dish.

1 lb 90/10 ground beef
1 can campbell's broccoli cheese soup
1 small onion
1 bag of pepperoni
Shredded/grated cheddar or other cheese
Frozen tater tots
Worcestershire sauce
Soy sauce
Garlic (fresh or powder)
Salt and Pepper

Preheat oven to 425

Finely chop the onion and add to a skillet (add garlic now if fresh 1-2 cloves minced/pressed) with a very small amount of oil, cook until almost translucent.

Add ground beef to skillet, add worcestershire and soy sauce about a Tbsp each. Add salt/pepper about a tsp each. Cook uncovered until the water from the sauces and onion has evaporated and it is mostly dry. Drain if necessary.

Pour the beef into an 7x9 or similar sized casserole dish, spreading evenly. Add the can of soup, spreading evenly across the beef. Layer pepperonis on the soup to cover the entire surface. Add cheese, covering all the pepperoni. Add tater tots, arranging in lines/grid to cover the whole surface. Cook uncovered at 425 for ~40 minutes or until the tater tots are done.

Anyway, beef can be more forgiving than other meat and cooked less if it is of a good quality. If you have gotten it minced by a butcher then you can cook the burger rare and it will taste better for it.

A good burger needs only beef and salt with no binders or fillers like eggs or breadcrumbs. Once shaped into burgers chill in the fridge and they will hold together better when you cook them.

yes they do. minced beef curry is quite common, haven't you had korma? Japanese also sometimes use ground beef for curry, but they use pretty much any meat they feel like over there. Try ground beef Japanese curry on fries, it's surprisingly addictive.

Strogonoff with ground beef is perfectly fine. It wouldn't be as tasty as using steak, but it would be faster.

Egg rolls with ground beef would be fine. Many Chinese restaurants produce dumplings with beef rather than pork, pork is typically preferred because it is juicier, but there's actually a specific kind of ground beef-filled bing in Taiwan that tastes even better than most common pork potstickers.
